Russian Rye Sourdough

- 300 grams Bread Flour
- 200 grams Rye Flour
- 300 grams Water
Mix all ingredients together using a dough whisk. The dough should be sticky and won't hold any strength.
After 30 minutes, perform a set of stretch and folds. Wait another 30 minutes and stretch again for a total of 4 times.
Wait for the dough to become bubbly and risen. For me, it takes about 8 hours. It should be the same amount of time as a regular sourdough loaf but depends on your starter.
