An adaption of the classic Russian Borodinsky Bread.
Russian Rye Sourdough
A bold and spiced sourdough that is sure to impress.
Ingredients
- 300 grams Bread Flour
- 200 grams Rye Flour
- 300 grams Water
Instructions
- Mix all ingredients together using a dough whisk. The dough should be sticky and won't hold any strength.
- After 30 minutes, perform a set of stretch and folds. Wait another 30 minutes and stretch again for a total of 4 times.
- Wait for the dough to become bubbly and risen. For me, it takes about 8 hours. It should be the same amount of time as a regular sourdough loaf but depends on your starter.
I’ve scoured the internet for a good dark rye bread recipe. And I mean a good one. I want my Ukrainian husband to try it and say “it’s just how I remember”. After making this bread and giving him a slice, he didn’t say anything. He took another bite, and then another, and then another. After finishing it he asked why I made it and then said “if this was drier, it would taste exactly like the bread from my childhood”. Success.
